Coconut Flour and Coconut Oil

You may want to consider coconut as a regular part of your diet. There are endless ways to indulge! The best way to experience the many health-giving gifts of coconut is to try virgin coconut oil.

I truly believe Virgin coconut oil is one of the smartest oils you can eat. Rich in lauric acid, coconut oil contains NO trans fat, strengthens your immune system and boosts your metabolism! I am not diagnosing jut sharing my opinion.

Also, by substituting Coconut Flour in some baking recipes, you can literally recreate your favorite treats, turning them into delicious guilt-free health promoting foods.

Coconut flour which has been defatted and then finely ground into a powder has a very similar consistency to wheat flour. However, that’s where the similarities begin and end. Coconut flour is unlike any other consisting of 14% coconut oil and 58% dietary fiber! The remaining 28% consists of water, protein, and carbohydrate. If you haven’t tried coconut flour yet, here are some more excellent reasons to start:

·Coconut Flour is gluten-free and hypoallergenic. With as much protein as wheat flour, coconut flour has none of the specific protein in wheat called “gluten”. This is an advantage for a growing percentage of the population who have allergies to gluten or a wheat sensitivity.

·Coconut Flour consists of the highest percentage of dietary fiber( 58%) found in any flour. Wheat bran has only is 27% fiber.

Gluten-Free and the Carolina Rice Plantation

This company grows and mills not only rice & rice flour, but also corn, milling grits and corn meal.

According to the company, their mill produces only those products, nothing else grown or milled on the farm.

I did not ask what was grown nearby. With celiac disease you should be sure you have no cross contamination, if you are gluten intolerant or have an allergy you are best to do your homework for cross contamination as well.

This could be a good source for some people. Check them out.

Casein Free and Palm Shortening.

It's been discovered that organic, non-hydrogenated palm fruit shortening is a fabulous, natural way to make delicious baked goods without butter, and without heavy processing or trans-fats. It's also high in vitamin E.

You can find this product at Whole Foods, and at many health food stores and food co-ops.

By the way, if you are OK with butter and prefer to use it, substitute 7 tbsp. cold butter for the palm fruit shortening in many of your recipes.

I use the Spectrum brand personally yet know there are many good brands available.

My Personal Story with Bio-K Plus

While on a three-week book tour last fall in New England, I spent many meals dodging gluten, often driving away still hungry. Many days I know I ingested gluten from hidden sources or even an unclean grill, due to the effects I experienced soon after; the gluten was taking its toll.

My intestines and joints burning, I stopped at a Whole Foods. I saw some little bottles—Bio-K+, which I’ve seen for years. I grabbed one and pushed my cart forward. I couldn’t wait. I opened up the bottle and took a large gulp of the liquid contents. I felt immediate relief and knew, “Something is right here!” I finished the little bottle and proceeded to tell my husband I wanted to buy more.

Now my husband knows me, knows the years of troubles without the correct diagnosis, and now knows clearly the signs that I’ve ingested some gluten inadvertently. He also knows me well enough that when I say something makes me feel better, he’s 100% behind it. He purchased for me a small box of six, and off we went.

My symptoms usually take three to seven days to get better, which I call my period of “recovery.” By the next day my symptoms were better, and I could actually feel my small intestines inflammation subsiding drastically. I’ve spoken to many celiacs, and it does seem that this three to seven day recovery period is common.

Well, needless to say, I came home and have been using this same product Bio-K+ since my fall 2008 book tour. I have not had a simple adverse effect since taking it. I’ve elected to take the dairy-free Bio-K+, which is soy-based, and I can’t recommend a finer product.

There are 50 billion live and active bacteria per bottle. Fresh-culture Bio-K+ bacteria resist stomach acid and bile salt and works with the intestinal tract to get results—like mine.

Gluten-Free at Starbucks – 2010

Good news ! We have gluten-free options at Starbucks.

When Starbucks announced the cancellation of their cake via Twitter this started a petition to bring back the cake. They listened and acted upon this petition and the many calls they received.

All of the gluten-free items they now have offer a longer shelf life. This they hope will  lead to less waste and less profit loss. For the full Starbucks gluten-free product list, check out Gluten-Free Philly’s post. There are nut free and dairy free options this time around too.

Starbucks has shared that after the discontinuation of their Valencia Orange cake the gluten-free consumers really expressed a desire for  more healthy snacks so they decided to accommodate this need. Yay Starbucks!

It’s is a smart move for Starbucks to accommodate gluten-free, vegan and organic minded consumers with these new food options. Many people will enjoy these products.

I have stopped at a few Starbucks to check them out. I have found ones that do not have the GF items yet. I was told they are getting them, the one in Texas airport told me that it has to do with the heightened security on getting new products in and the one in Clearwater, Florida at Barnes and Noble just did not have them delivered as of yet.

Let me know what you guys find out and if they have Oats or not as I know that Lucy’s ( above) does have oats, be it gf oats though. I still prefer to stay off the oats as much as I can.

Tampa, Fla. October 7, 2009  Viitals owner, Ivan Nikolov  announced the opening of its new retail storefront, which offers gluten-free healthy choices for those trying to live a healthier lifestyle. The bakery had been strictly wholesale until its grand opening.

 

This bakery offers gluten-free, hypoallergenic, high in protein, organic ingredients snacks, such as muffins, crackers, cake-bars, loafs, and more.

The Bulgarian bodybuilder, Ivan Nikolov and NPC Tampa Bay Classic overall winner and his wife started this bakery to service the needs of the growing community with allergies, celiacs and the general public looking for higher protein and nutritious snacks.

The opening of his new storefront, Niklov said, now makes him not only a wholesaler, but also a retail gluten-free cafe.

Ivan states that his products are made in a dedicated gluten-free facility, and they are hypoallergenic, vegetarian or completely vegan, all-natural with many ingredients that are organic. He balances his products by adding protein, making them a complete meal.

Ivan said customers will be served gluten-free bread, cookies, brownies, cakes, VIITALS smoothies with organic fruit and protein, gluten-free sandwiches and gluten-free soups.

Gluten- Free Dining in Chicago- Review on Tina Turbin

Through my lovely sister-in-law Marsha , I had the pleasure of connecting up with Laura Hansen,  “Best of the Best Dining in Chicago”.  They met at an event and then discussed gluten-free foods, lifestyle and eating and what do you know, the name Tina Turbin came up. The rest is history.

Laura contacted me to ask to do a review on me and my site and of course we  got into the conversation of celiac and gluten-free, some of my favorite subjects. I have a new friend who loves food as much as I do and she is a phenomenal reviewer and writer on foods and restaurants. We have so much in common.

She previously reviewed Deerfield Bakery in the Schaumburg, Illinois and it just so happens that I just had a terrific conversation with Tim Schmitt, the owner and will be reviewing his products and his 3 bakeries next month!

Central Florida is the World’s Most Celiac-Friendly Destination!


 
It’s always nice to receive a pleasant message, which in turn makes the day that much more brighter.
 
The Attune Foods Community Manager recently wrote to me concerning a  product review of their delicious gluten-free bars.  As a side note, these bars are fantastic and the video and written rave reviews will be posted soon!
 
She shared with me some TERRIFIC news about central Florida and paid me a lovely compliment:

Gluten-Free Taste Testing Parties: East and West Coasts

At my Gluten-Free taste-testing party on Sunday the 17th, we tested 42 Gluten-Free products in the course of 2-1/2 hours. I had everyone take diligent notes on their feedback for each and every item I presented. The results have already been put together in my various reviews which my team in LA and FL worked hard on.
 
I want to thank Janet, Head of the Tampa Area Celiacs; and Brian Kelly, Founder of the Pinellas County Celiac Support Group and Secretary Susan Wilson for attending and lending their support and time. A special thanks goes to all those who attended: children, doctors, nutritionists and friends. You are all wonderful and I know you all left with a belly full of delicious food.
 
From this point forward I will be sharing with you the written and video results. Please check the Review sections located on the lower right hand side of my Gluten-Free home page starting on January 28th. Every week I will be releasing more!
